-RECEIVED RECIPES FOR CARNE SECA, DRIED CHORIZO, AND CEVICHE -CEVICHE WILL NEED 7 DAY LABEL AND CONSUMER ADVISORY. NO OTHER ITEMS REQUIRED FOR CEVICHE. -DISCUSSED PROPER ACIDIFICATION FOR CARNE SECA AND DRIED CHORIZO. BOTH PRODUCTS MUST BE PH 4.2 OR LOWER. -THE ESTABLISHMENT WILL PURCHASE A PH TESTER. TIMES PH MUST BE TAKEN WILL BE ESTABLISHED IN HACCP DOCUMENTS. -HACCP WILL BE COMPLETED BEFORE NEXT MEETING. -VARIANCE REQUEST WILL BE SUBMITTED AT NEXT MEETING. -LEFT COPIES OF HACCP INFORMATION AND JERKY AND DRIED MEAT STUDIES. FOLLOW UP WILL OCCUR ON FEBRUARY 9 AT 2 PM. |
